I know I am kinda late to respond but, it is not possible in any difficulty, but there is a way to kill the witch easily with an explosive.
You blow the witch up, and she will stagger, while she is staggering you can melee her and she will get staggered again like any other zombies will.
so, you blow her up, bash her, shoot, bash, shoot, bash, repeat untill she dies.

OR

you can just surround her with your possies and gang beat her untill she dies.

If I made an achivment I would have somthing like "beat the witch" where you have to beat her to death will your buds

either way, i made an achievement called "Beat the Bitch" and it had something to do with that...something like that...
